Banana Muffins

Ingredients (for 12 muffins):

• 3 Bananas, fully ripped and mashed
• ½ cup of Confirel Organic Palm sugar
• ⅓ cup honey (best if use wild honey from the Mondulkiri area in Cambodia)
• 1 egg
• 1 Vanilla bean of 1 teaspoon of vanilla extract
• 1 ½ cups whole wheat flour (or all purpose)
• 2 teaspoon of baking powder
• 1 teaspoon of ground cinnamon
• ½ teaspoon of ground nutmeg
• ½ teaspoon of salt

Preheat the oven to 350 degrees Fahrenheit. Coat a muffin tray with some butter.
Mix the ripped bananas, the Confirel Organic Palm Sugar, the honey, the inside of the vanilla bean and the egg.
In another bowl, mix together the flour, the baking powder the salt and the ground cinnamon.
Stir this mix within the first bowl. Transfer to the muffins tray.
Bake in the oven until lightly brown. (Usually around 15 minutes).
Enjoy when still warm and discover the real sweet taste of the palm sugar!
